Dark color ranging from ruby to black. Nose of red and black fruits, Provencal spices (garrigue), peppery, a light touch of vanilla with some gamey nuances. Always very complex noses. On tasting, we find the different aromas felt olfactory, all with a presence of very fine tannins. The palate is full and generous with a very pronounced length, a nice touch of freshness on the finish and a remarkable balance.
Grenache 70 - 75%
Syrah 15 - 20%
Mourvèdre 10 - 15%
Cinsault and Clairette 2 - 5%
Counoise and Vaccarèse 1 - 2%
The manually harvested grapes undergo rigorous qualitative sorting. They are completely destemmed and refrigerated at 14 ° C for a cold pre-fermentation maceration in order to extract a maximum of fruit and color. The grapes are v inified in self-pigmenting stainless steel vats with temperature regulation. The punching down is done gently for a noble extraction. Av inification is preferably carried out with 'double grape variety'. On our terroirs, we thus obtain a much greater aromatic richness than during vinification by separate grape varieties. Depending on the type of wine, the vatting period is 20 to 26 days. The aging of the different vintages is broken down as follows:
Oak lightning (30 to 40%)
Stainless steel tank (40 to 45%)
Barrel (20 to 25%)
Deep glistening red. Pungent aromas of fresh red fruit, licorice, potpourri and baking spices pick up a bright mineral overtone with air. Pliant, sweet and lively on the palate, offering juicy raspberry and cherry liqueur flavors, a hint of spicecake and nervy back-end energy. Fine-grained tannins add shape and subtle grip to a long, floral- and spice-driven finish that leaves a hint of white pepper behind. This is quite energetic for the vintage.
I loved the 2017 Châteauneuf Du Pape from barrel and it showed well from bottle, with beautiful black cherries, ground herbs, earthy minerality, and a hint of violets. Rich, medium to full-bodied, concentrated, with fine tannins, this is straight-up classic, well-made Châteauneuf Du Pape to drink over the coming 10-15 years. The blend is 70% Grenache, 15% Mourvèdre, 10% Syrah, and the balance Cinsault and Clairette, brought up in a mix of stainless steel, old barrels, foudre, and a tiny amount (6%) in new oak.
The full-bodied 2017 Chateauneuf du Pape is a blend of 70% Grenache, 15% Mourvèdre, 10% Syrah, 3% Cinsault and 2% Clairette. Aged in a mix of barrels, foudres and tanks, it shows hints of cedar and vanilla on the nose, plus peppery spice and milk-chocolate flavors that finish on a tannic, astringent note.
